Classic Italian Panini with Prosciutto and Fresh Mozzarella

1 (12-ounce) loaf French bread, cut in half horizontally

Tiny Sloppy Joes

Sloppy Joes

Ingredients

3/4 cup chopped onion
1/2 cup chopped green bell pepper
3/4 pound ground round
2 cups no-salt-added tomato sauce
2 tablespoons tomato paste
1 tablespoon prepared mustard
1 teaspoon chili powder
2 teaspoons Worcestershire sauce
1/2 teaspoon salt
1/2 teaspoon sugar
1/2 teaspoon dried oregano
1/8 teaspoon black pepper
12 (1 1/2-ounce) rolls, split

Stove Top Meatloaf Muffins

1 box Stove Top stuffing
1 lb extra lean ground beef (use ~96% lean or else it’ll be greasy)
2 egg whites (or 1 egg)
1 cup water

Mix everything together and divide into a 12 muffin muffin tin. Bake at 350 for 25 minutes.

My research is indicating that these would be 2 points each on the weight watchers.  I also saw varieties adding chopped onion and green pepper for a more traditional meatloaf vibe.

I am going to make them right now and report back on their deliciousness (hopefully)

For the record, I was lame and got 90% lean beef so hopefully they won’t be too greasy. Also I’m using Savory flavor stuffing.

Tortilla Soup

Here is a yummy soup and it is easy to make, if you have Trader Joe’s near you - if not, I guess you are screwed.

Trader Joe’s Tortilla Soup

4 Cups Trader Joe’s Vegetable Stock or Broth

2 Cups Trader Joe’s Tomato & Red Pepper Soup

1 Jar Trader Joe’s Corn & Chile Salsa (may use 1/2 jar for less spice)

2 Limes - juice

Salt & Pepper to taste

1 Cup Tortilla Chips

1/2 Cup Cheddar Cheese - shredded

1. Add first four ingredients to large sauce pan

2. Cook over medium heat for 20 minutes, add salt & pepper to taste

3. Coarsely crush tortilla chips into soup bowl - top with cheese

4. Ladle soup onto chips & cheese - serve immediately

Other Ideas:

add 1 can pinto beans at step 1

add frozen corn at step 1

top soup with slices of avocado and/or dollop of sour cream

I wanted brunch on Saturday morning and went searching Citysearch for a new brunch place. Screen Door was listed under Best Breakfast 2007. It was ninth on the list, but was close to the house, so off Jer and I went to check it out. While driving there, he got a phone call from his Dad. His sister, Dawnetta and her husband, Aaron were in town. All three of them would be running the Portland marathon the next day, but were out and about. They wanted to know what we were up to and decided to join us for brunch.

Sharon’s Chili

I was looking for a chili recipe and really couldn’t find one with ingrediants I liked. So I took what I liked from various areas and came up with this. My son’s even liked it. I serve it with Corn Bread muffins and Cheese.

¾ lb Ground Sausage (country style)

2lbs Steak cut in bite size pieces

¼ lb Bacon – cut in pieces

1 Diced Red Onion (medium – large)

½ a bloom approx 6 pieces Minced fresh garlic

2 small cans Minced Green chili

1 large Can of Diced Tomatoes

2 cans Kidney Beans

2 cans Canned Pinto Beans

3 tbs Garlic Salt

3 tbs Black Pepper

1 tsp Chili Powder

Place Dutch oven on coals to pre-heat about 10mins. Add coals as necessary to keep high. Brown Bacon. Sauté onions and garlic in the bacon with the bacon grease. When onion is tender add ground sausage. Crumble and stir until brown. Add steak cubes – turn occasionally until done. Add Tomatoes and Green Chilis – let come to a simmer. Stir in beans gently so not to smash them. Stir in seasonings. Cover, and place 8 – 10 coals on lid – let come to a boil, about 30 – 45 minutes stirring occasionally.

I know this says dutch oven - but I have done it on the stove top in a pot - basically it needs to cook at med-high heat for about 30 - 45 minutes once all the meats are browned and all ingrediants are added. This recipe easily serves 6. (more likely 8 )

The Gallery of Regrettable Food

The Gallery of Regrettable Food is extremely scary. It is from “recipe” books ranging from the ’30’s to 60’s. It might even have some stuff later than that. It is ads by food products, like 7-Up, Jell-O, Knudsen dairy products that include their helpful recipes so you can make tons and tons of very scary looking food. It also has fabulous commentary. You can scan through it to become frightened, but I highly recommend taking the time to read through all of it and become horrified.
